Sourdough Challah Recipe


Ingredients:

• 1 cup active sourdough starter

• 4 1/2 cups all-purpose flour

• 1/2 cup sugar

• 1/2 cup vegetable oil

• 3 large eggs (reserve one for egg wash)

• 1 teaspoon salt

• Sesame seeds or poppy seeds (optional, for topping)

Instructions:

1. Prepare the Starter:

• Ensure your sourdough starter is active and has been recently fed.

2. Mix Dough:

• In a large mixing bowl, combine the sourdough starter, 4 cups of flour, sugar, oil, two eggs, and salt.

• Mix the ingredients until a shaggy dough forms.

3. Knead:

• Turn the dough onto a floured surface and knead, gradually adding the remaining 1/2 cup of flour, until the dough is smooth and elastic.

4. First Rise:

• Place the dough in a greased bowl, cover it with a damp cloth, and let it rise in a warm spot for about 2-3 hours, or until doubled in size.

5. Shape the Challah:

• Turn the dough out onto a floured surface. Divide it into three equal portions.

• Roll each portion into a long rope. Braid the ropes together and tuck the ends under.

6. Second Rise:

• Place the braided challah on a baking sheet lined with parchment paper. Cover it with a damp cloth and let it rise for another 1-2 hours, or until it visibly puffs up.

7. Preheat Oven:

• Preheat your oven to 350°F (175°C).

8. Egg Wash and Seeds:

• Beat the remaining egg and brush it over the top of the challah. Sprinkle sesame seeds or poppy seeds if desired.

9. Bake:

• Bake in the preheated oven for 25-30 minutes or until the challah is golden brown and sounds hollow when tapped on the bottom.

10. Cool and Enjoy:

• Allow the challah to cool on a wire rack before slicing. Enjoy it with your favorite spreads or use it for delicious sandwiches!
