Stinging Nettle Pesto Recipe



Ingredients:

  • 2 cups fresh stinging nettle leaves (wear gloves when handling to avoid stings)

  • 1/2 cup fresh basil leaves

  • 1/2 cup grated Parmesan cheese

  • 1/2 cup pine nuts or walnuts (toasted for extra flavor)

  • 2 cloves garlic, peeled

  • 1/2 teaspoon salt (adjust to taste)

  • 1/4 teaspoon black pepper

  • 1/2 to 3/4 cup extra-virgin olive oil

  • Juice of 1/2 lemon (optional, for brightness)

Instructions:

  • Prepare the Stinging Nettles:

    • Wear gloves to avoid stings. Rinse the stinging nettle leaves thoroughly under cold water. Blanch them in boiling water for about 1-2 minutes to remove the stinging hairs. Drain and immediately transfer to a bowl of ice water to stop the cooking process. Once cooled, drain again.

  • Toast the Nuts:

    • If you're using pine nuts or walnuts, toast them in a dry skillet over medium heat until they become golden brown. This enhances their flavor. Set aside to cool.

  • Combine Ingredients:

    • In a food processor, combine the blanched stinging nettle leaves, fresh basil, toasted nuts, grated Parmesan cheese, garlic, salt, and black pepper.

  • Pulse Into a Coarse Mixture:

    • Pulse the ingredients in the food processor until you have a coarse mixture. Stop and scrape down the sides of the processor if needed.

  • Add Olive Oil:

    • With the food processor running, gradually stream in the olive oil until the pesto reaches your desired consistency. You may need to adjust the quantity based on your preference.

  • Adjust Seasoning:

    • Taste the pesto and adjust salt and pepper as needed. If you like a bit of zing, add the juice of half a lemon and pulse to combine.

  • Store or Serve:

    • Transfer the stinging nettle pesto to a jar or airtight container. You can store it in the refrigerator for up to a week or freeze it in ice cube trays for longer storage.

  • Enjoy:

    • Use the stinging nettle pesto as a topping for pasta, a spread for sandwiches, a dip for veggies, or a flavor enhancer for grilled meats and fish. Get creative!
